This white wine is 100% assyrtiko from 80-year-old vines in 3 plots on Santorini: Vourvoulos, Megalochori, and Imerovigli. The grapes are pressed as whole bunches and fermented in oak, then raised in concrete and other neutral vessels for a total of about 15 months. The name comes from the Greek myth of Alcyone, who was turned into a halcyon bird. Only about 3,600 bottles were made.

It pours a bright golden straw, opening with flint, crushed stone, and ripe stone fruit. On the palate, the full-bodied frame balances rich texture with intense volcanic minerality. Lime peel and a subtle caramel note sit underneath. Santorini's piercing acidity runs through the center. It finishes long, saline, and powerful.
