This non-alcoholic sparkling drink comes from Gut Oggau in Burgenland and is made from herbs, not grapes. It is 98% herbal extract of nettle, chamomile, yarrow, dandelion, and wormwood, plants that grow in and around the Oggau vineyards, with a little organic sugar, honey, and lemon juice. It ferments briefly with natural cultures and is then gently pasteurized, which stops fermentation before alcohol builds while keeping its natural bubbles. It is certified organic and meant to be served in a wine glass.

It pours a pale, hazy straw, opening with chamomile, citrus, and fresh-cut herbs. On the palate, the light, fizzy frame balances apple and quince fruit with a gentle bitterness from the wormwood. A floral, honeyed note sits underneath. A lemony freshness keeps it lively. It finishes dry, herbal, and clean.
