This organic sparkling rosé is a traditional method bottling crafted by Laurens Hartman from vineyards in the high-elevation, wind-swept plains of Amyntaio in Northwestern Greece. The blend combines ninety-eight percent xinomavro with two percent limniona, harvested early to preserve structural tension. The fruit undergoes a brief skin maceration for color before a spontaneous primary fermentation driven by native wild yeasts. It undergoes secondary bottle fermentation and matures on its fine lees before receiving a minimal, dosage.

It glows with a pale salmon-pink color and a fine, steady stream of bubbles, opening with fresh aromas of wild strawberry, pomegranate, and dried rose petals. A light-bodied, dry frame pairs red fruit with a sharp vein of mineral acidity. The fine mousse lends a creamy softness that cushions the wine's structured framework. It finishes clean and dry, leaving a trace of wet stone and sea salt.

Domaine Karanika is Laurens Hartman-Karanika and Annette van Kampen's organic and biodynamic estate in Amyndeon, the cool, high-altitude plateau of northwestern Greece. Drawn to the region's naturally high acidity and old Xinomavro vines, they built the domaine around traditional-method sparkling wine while also producing still wines from Xinomavro, Assyrtiko and other varieties. The winery is largely subterranean and designed to work with the local climate, with solar energy and composting integrated into the farm. Karanika's wines are precise, dry and vibrant, establishing Xinomavro as a compelling source of serious Greek sparkling wine.
