This low-intervention white wine is a pure varietal expression of vitovska, an indigenous grape cultivated on the limestone cliffs of Carso. Winemaker Benjamin Zidarich treats the fruit as a vessel for stone, utilizing a hands-off cellar mindset to maximize soil transparency. The hand-picked grapes undergo an open-vat spontaneous fermentation with native wild yeasts and a prolonged skin maceration. The liquid matures for two years on its lees inside large neutral Slavonian oak casks before an unfiltered bottling.
It displays a majestic amber-gold hue, releasing delicate aromatics of fresh apricot, yellow peach, and crushed limestone rock. On the palate, the medium-bodied frame is seamless and deeply stony, focusing on a precise mineral-driven presentation. A vertical wave of alpine acidity cuts directly through the waxy texture, providing an almost mentholated coolness. Fine, integrated tannins provide a smooth structural grip that frames the clean, long-lasting finish nicely. It concludes bone-dry.
Zidarich is Benjamin Zidarich's biodynamic estate in the Carso, the limestone plateau above Trieste where vines struggle through iron-rich red earth and fractured rock. Beginning with one hectare in 1988, Benjamin expanded the domaine while centering it on Vitovska, the region's emblematic white grape, alongside Malvasia, Sauvignon and the local red Teran. His five-level cellar is carved deep into the limestone beneath the vineyards and allows wine to move largely by gravity. Extended skin contact, native fermentation and patient aging produce textured, savory wines whose salt, herbs and mineral grip feel inseparable from the harsh, wind-shaped landscape.
