Caparsa Mimma Rosso Toscana IGT 2019
Azienda Agricola CaparsaGrape: Sangiovese
Vintage: 2019
Type: Red
Produced from a select allocation of old sangiovese vines in Radda in Chianti, this red wine represents a site-specific parcel blend. Paolo Cianferoni manages the family farm under strict certified organic practices to protect the natural acidity of the high-elevation site. The winemaking utilizes spontaneous native yeast fermentation in traditional concrete tanks, prioritizing infusion over heavy extraction. The wine matures in large neutral oak casks to allow the tannins to resolve naturally without wood makeup.
It displays a bright, translucent ruby hue, releasing fragrant aromatics of wild sour cherry, red raspberry, and cedar shavings. On the palate, a light-to-medium body shows an elegant fluidity, balancing red fruit flavors with a chiseled mineral baseline. Savory notes of tobacco leaf, incense, and leather develop nicely as the wine opens up. Fine-grained, supple tannins provide a subtle structural grip across the mid-palate without feeling heavy. It finishes bone-dry, leaving a mouthwatering mineral trace.
