This white wine comes from the Baden region of Germany, produced under a collaborative natural wine project by Claus Schneider. The one-hundred percent gutedel grapes are hand-harvested from rows rooted in complex clay and limestone soils that naturally restrict yields. The winemaking utilizes low-intervention protocols, featuring a cool fermentation driven entirely by native wild yeasts in neutral stainless steel vats. It ages on its fine lees for several months to encourage textural balance without wood manipulation.

It pours a pale straw-yellow color, releasing clear aromatics of fresh green apple, lime zest, and white orchard flowers. A sleek, light-bodied frame balances crisp fruit flavors with an underlying stony mineral core. A lively wave of natural acidity cuts right through the center of the wine, providing excellent structural tension. Subtle notes of fresh pear and a distinct salinity add depth across the clean mouthfeel. It finishes completely dry, leaving a refreshing trail.
