Grape: Savagnin
Vintage: 2007
Type: White

This traditional white wine is made from savagnin vines planted in 1977 on clay and marl soils by Jean-François Ganevat. The winemaking features whole-cluster fermentation and a complete malolactic conversion driven entirely by indigenous wild vineyard yeasts. It is aged in an oxidative style sous voile for forty-eight months inside neutral wooden casks, allowing a natural yeast veil to grow on the surface. Bypassing modern chemical alterations, sulfur is added only sparingly during final bottling.

It pours a deep amber-gold color, releasing complex aromas of bruised yellow orchard fruit, walnut shell, and dried spices. On the palate, a medium-bodied frame delivers a tangy alpine acidity that slices directly through the volume. Savory flavors of toasted hazelnut, brine, and sourdough bread dough dominate the textured mouthfeel. The long oxidative maturation grants the wine a shelf-stable focus that feels completely balanced. It finishes bone-dry, leaving a lingering trace of sea salt.

Jean-François Ganevat also known as Fanfan has achieved a cult like following and brought incredible might to the Jura through his wines. Without doubt a reference point for the Jura and also for contemporary French winemaking.

His winemaking epitomizes all that we are looking for. Biodynamic vineyard work, low intervention wine making, a detail-oriented approach with a touch of magic. Not too mention working with up to 40 different varieties and crafting as many as 35 cuvees.

His sister Anne joined him and they have a strong and wonderful negociant business with grapes sourced from all over France.

Jean-François Ganevat is a master of his craft, grounded in a detail oriented perfectionism on one hand while being an explorer of the eclectic creating wines that are otherworldly.

At the heart of it all, in the charming hamlet of La Combe de Rotalier. With only eight and a half hectares under vine, the family has seventeen different local varieties planted of both red and white grapes—an incredible amount of variation to consider for holdings of such small size.

History

The Ganevat family has been farming vines here since 1650, although the family supplemented their grape-growing with a dairy that produced milk destined for the local cheese, Comté, until 1976.

After working both for his father and for Jean-Marc Morey in Chassagne-Montrachet, he returned to the Jura in 1998 to take over the family domaine.
