This white Burgundy wine is an estate chardonnay sourced from high-altitude plots within the Hautes-Côtes de Beaune. The fruit is selected from young vines planted between 2019 and 2021 with high-quality massal selections of chardonnay. Vinification utilizes a low-intervention spontaneous fermentation with native wild vineyard yeasts inside large neutral French oak barrels, completely avoiding chemical corrections. The liquid matures naturally on its fine fermentation lees without bâtonnage to safeguard site-specific clarity.
It pours a bright straw color, releasing fresh aromas of pear, white flowers, and cool mint leaf. On the palate, the medium-to-full-bodied frame is satiny and incisive, balancing a good texture with an underlying sharp cut. A vertical wave of mineral-driven acidity runs through the center, keeping the fluid mouthfeel thoroughly refreshed. Clean orchard fruit profiles seamlessly wrap around a core of fine lees richness across the mid-palate. It concludes with a gently aromatic finish.
Vincent Dancer is one of the cult names of Chassagne-Montrachet, admired for white Burgundies that feel pure, unforced and intensely connected to limestone. Originally from Alsace, Dancer took over family vineyards in Chassagne, Meursault, Puligny and other Cote de Beaune villages, choosing organic farming and a cellar style that avoids unnecessary intervention. The wines are fermented with native yeasts, raised with restraint and bottled with a sense of quiet confidence.
