This skin-contact white wine is part of the watched Athénaïs de Béru négoce line, focusing on certified organic vineyards in Burgundy. The aligoté grapes are harvested by hand from parcels characterized by limestone-rich soils and cool mountain wind exposure. The winemaking utilizes extended whole-bunch skin maceration in neutral containers to build natural phenolic stability and structural complexity without modern cellar additions. Spontaneous fermentation relies on native vineyard yeasts, followed by aging on its fine fermentation lees before bottling unfiltered.
It pours a hazy amber-gold color, releasing distinctive aromas of dried apricot, citrus peel, and fresh potting soil. A medium-bodied, texturally driven frame pairs dried stone fruit flavors with a tea-like tannin structure. A gentle phenolic grip frames mid-palate cleanly, balanced by a sharp beam of mineral acidity. Subtle notes of raw hazelnut and wild thyme add depth across the textured mouthfeel. It finishes bone-dry, leaving a mouthwatering trace of salinity.
