Grape: Chardonnay
Vintage: 2022
Type: White

This white wine comes from the En Sursis single vineyard, showcasing a pure expression of Chardonnay grown on steep, marly slopes in Arbois. Stéphane and Bénédicte Tissot manage these vines under strict biodynamic principles to preserve high natural acidity. The hand-harvested fruit is fermented spontaneously with native wild yeasts in neutral French oak barriques. Utilizing the topped-up method to prevent oxygen contact, this bottling achieves an authentic and vibrant regional character.

It pours a pale straw hue, releasing refined aromas of white peach, lemon zest, and delicate orchard flowers. On the palate, a medium-bodied, sleek frame pairs crisp citrus flavors with an underlying stony mineral core. A zesty, electric acidity cuts directly through the mid-palate, providing excellent structural tension. The mouthfeel is refined and fluid, showing a balanced purity built for long-term cellaring. It concludes with a bone-dry finish, leaving a long-lasting saline trace.

Stéphane Tissot and his wife Bénédicte have 35 hectares of vineyards “cultivated in bio-dynamic viticulture (certified by Demeter) to allow the soils to live, to have grapes untouched by chemical products, to allow natural yeast fermentations, to reduce the doses of sulfur in the cellar.”

They produce truly unique, terroir-driven natural wines, wines we love, admire, and cherish. These are without doubt some of our most prized wines.

André and Mireille Tissot founded their estate in 1962, in the village of Montigny-les-Arsures, in the Jura. Stéphane took over from his father with a new vision and converted it to chemical-free farming, organic and then biodynamic. They are meticulous in their farming and in the cellar, producing up to 28 unique cuvees.

A wine made with love and passion produces an emotion...
You can find in a wine the personality and the character of those who made it because each gesture, each operation, each decision has its importance.
