This traditional white wine is made from one-hundred percent Savagnin grapes grown in biodynamic vineyards across the Arbois region. The fruit undergoes spontaneous native fermentation in neutral oak casks, followed by a complete malolactic conversion. It is aged sous voile, meaning the barrels are left unfilled so a natural film of yeast grows on the wine's surface. This slow oxidative aging process builds deep structural stability and a savory profile, with sulfur only added sparingly.

It displays a pale gold color with green reflections, opening with a complex nose of lemon pith, white flowers, and toasted hazelnut. A medium-bodied frame balances a slightly textured mouthfeel with a sharp beam of mineral acidity. Clean flavors of green orchard fruit and citrus oil interweave with a distinct vein of marine salinity. A pleasant mineral bitterness develops on the back end, adding structural definition. It concludes with a bone-dry, subtly iodized finish.

Stéphane Tissot and his wife Bénédicte have 35 hectares of vineyards “cultivated in bio-dynamic viticulture (certified by Demeter) to allow the soils to live, to have grapes untouched by chemical products, to allow natural yeast fermentations, to reduce the doses of sulfur in the cellar.”

André and Mireille Tissot founded their estate in 1962, in the village of Montigny-les-Arsures, in the Jura. Stéphane took over from his father with a new vision and converted it to chemical-free farming, organic and then biodynamic. They are meticulous in their farming and in the cellar, producing up to 28 unique cuvees.
