Sourced from organically farmed plots in Arbois, this white wine highlights a non-oxidative expression of the indigenous Savagnin grape. Stéphane and Bénédicte Tissot manage the winemaking process using the topped-up method, known as ouillé, where barrels are refilled regularly. The fruit ferments spontaneously with native wild yeasts in neutral French oak casks, bypassing modern synthetic adjustments. This zero-makeup process allows the natural varietal freshness and mineral components to develop without wood dominance or oxidative character.
It pours a pale straw color, releasing aromas of ripe apricot, yellow peach, citrus peel, and savory baking spices. A medium-bodied frame balances orchard fruit flavors with a sharp, racy line of mountain acidity. The mouthfeel is clean and fresh, showing a lovely tension and a subtle waxy texture. Complex notes of wildflower honey and wet stone build a clean profile across the mid-palate. It finishes completely dry and long, leaving a mouthwatering mineral trace.
Stéphane Tissot and his wife Bénédicte have 35 hectares of vineyards “cultivated in bio-dynamic viticulture (certified by Demeter) to allow the soils to live, to have grapes untouched by chemical products, to allow natural yeast fermentations, to reduce the doses of sulfur in the cellar.”

André and Mireille Tissot founded their estate in 1962, in the village of Montigny-les-Arsures, in the Jura. Stéphane took over from his father with a new vision and converted it to chemical-free farming, organic and then biodynamic. They are meticulous in their farming and in the cellar, producing up to 28 unique cuvees.
