This old-vine red wine comes from select parcels of Poulsard grown on gray marl soils in the Arbois appellation. Stéphane and Bénédicte Tissot destem the hand-harvested grapes by hand before initiating a three-month maceration in four-hundred-twenty liter clay amphorae. The winemaking completely skips punching down or pumping over, allowing a slow and gentle extraction driven by native wild yeasts. The wine ages in old neutral demi-muids and is bottled without added sulfur.
It shows a pale garnet color, opening with delicate, expressive aromas of wild strawberry, raspberry, and potting soil. The palate is light-bodied and fluid, showcasing a pure, fruit-driven expression that avoids simple fruit sweetness. A central beam of central acidity keeps the profile lively and refreshing across the mid-palate. Soft, silky tannins provide a gentle grip that structures the fluid mouthfeel nicely. It finishes clean, dry, and mouthwateringly light, benefiting from a slight chill.
Stéphane Tissot and his wife Bénédicte have 35 hectares of vineyards “cultivated in bio-dynamic viticulture (certified by Demeter) to allow the soils to live, to have grapes untouched by chemical products, to allow natural yeast fermentations, to reduce the doses of sulfur in the cellar.”

André and Mireille Tissot founded their estate in 1962, in the village of Montigny-les-Arsures, in the Jura. Stéphane took over from his father with a new vision and converted it to chemical-free farming, organic and then biodynamic. They are meticulous in their farming and in the cellar, producing up to 28 unique cuvees.
