This traditional sweet fortified wine is crafted from estate vineyards in Arbois managed under strict biodynamic practices since 2004. Winemaker Stéphane Tissot stops the fermentation of unfermented grape must by adding one-third aged house-distilled Marc du Jura brandy. The blend consists of Chardonnay and Savagnin grapes harvested at optimal ripeness to provide high natural sugar concentrations. The resulting mistelle is aged for years in old wooden casks to encourage textural integration and structural stability.
It displays a deep gold-amber color, releasing complex aromatics of candied orange peel, baked apricot, beeswax, and dried fig. A velvety, unctuous mouthfeel carries intense sweet flavors of golden fruit and warming baking spices. A sharp wave of regional salinity cuts right through the sweet volume, preventing the profile from feeling cloying. Subtle undertones of wild marjoram and a refreshing vermouth-like bitterness balance the finish. It concludes clean, persistent, and mouthwateringly dry on the back end.
Stéphane Tissot and his wife Bénédicte have 35 hectares of vineyards “cultivated in bio-dynamic viticulture (certified by Demeter) to allow the soils to live, to have grapes untouched by chemical products, to allow natural yeast fermentations, to reduce the doses of sulfur in the cellar.”

André and Mireille Tissot founded their estate in 1962, in the village of Montigny-les-Arsures, in the Jura. Stéphane took over from his father with a new vision and converted it to chemical-free farming, organic and then biodynamic. They are meticulous in their farming and in the cellar, producing up to 28 unique cuvees.
