Produced from a single high-altitude vineyard in Arbois, this pure Chardonnay bottling showcases a limestone-rich gravel terroir. Stéphane and Bénédicte Tissot manage the ancient plot using certified biodynamic farming to ensure structural concentration. Fermentation occurs spontaneously with indigenous wild yeasts in a mix of neutral and low-toast French oak barriques. The wine undergoes regular topping up to prevent oxidation and is bottled entirely unfined and unfiltered to respect the site.
It pours a bright straw color, releasing a nose of fresh citrus, white stone fruit, and a flinty matchstick reduction. The palate is medium-bodied and tightly wound, balancing a lean, chiseled structure with deep fruit volume. Clean flavors of green apple and grapefruit zest interweave with a sharp beam of natural acidity. The fine-grained texture builds nicely across the mid-palate, avoiding any heavy weight. It finishes long, dry, and saline, leaving a mouthwatering trace.
Stéphane Tissot and his wife Bénédicte have 35 hectares of vineyards “cultivated in bio-dynamic viticulture (certified by Demeter) to allow the soils to live, to have grapes untouched by chemical products, to allow natural yeast fermentations, to reduce the doses of sulfur in the cellar.”

André and Mireille Tissot founded their estate in 1962, in the village of Montigny-les-Arsures, in the Jura. Stéphane took over from his father with a new vision and converted it to chemical-free farming, organic and then biodynamic. They are meticulous in their farming and in the cellar, producing up to 28 unique cuvees.
