Crafted by Stéphane and Bénédicte Tissot, this sparkling white wine is made from one-hundred percent Chardonnay grown in Arbois. The estate utilizes native vineyard yeasts for both the primary fermentation and the secondary bottle fermentation, skipping commercial sugar additions. The vines grow directly into deep beds of porous limestone, which helps retain high natural acidity throughout the season. The wine undergoes extended lees contact in neutral containers before being disgorged with zero dosage.
It pours a pale straw color with fine, persistent bubbles, opening with focused aromas of green apple, pear, and white flowers. On the palate, the vinous frame balances floral freshness with a tense, mineral-driven line of chalky acidity. Crunchy flavors of citrus pith and orchard fruit wrap around a highly textured mid-palate. Subtle notes of brioche and raw hazelnut add depth without introducing heavy volume. It finishes completely dry, leaving a lingering, flinty mineral trace.
Stéphane Tissot and his wife Bénédicte have 35 hectares of vineyards “cultivated in bio-dynamic viticulture (certified by Demeter) to allow the soils to live, to have grapes untouched by chemical products, to allow natural yeast fermentations, to reduce the doses of sulfur in the cellar.”

André and Mireille Tissot founded their estate in 1962, in the village of Montigny-les-Arsures, in the Jura. Stéphane took over from his father with a new vision and converted it to chemical-free farming, organic and then biodynamic. They are meticulous in their farming and in the cellar, producing up to 28 unique cuvees.
