Sourced from a single vineyard plot planted in the 1970s, this white wine reflects a site-specific study of Chardonnay in Arbois. Stéphane and Bénédicte Tissot manage the estate biodynamically, focusing on vines rooted in complex clay and limestone soils. The hand-harvested grapes are fermented naturally with native wild yeasts in neutral French oak barrels. Aged for twenty-four months in topped-up casks, this zero-sulfur cuvée captures a pure expression of place.
It shows a clear yellow-gold color, releasing aromas of ripe yellow plum, lemon confit, and toasted hazelnut. On the palate, the medium-bodied frame balances a silky texture with a sharp, driving line of mineral acidity. Clean flavors of fresh pear and citrus oil integrate smoothly with a baseline of fresh butter. The wood integration is seamless, providing a subtle frame that guides the fluid texture. It finishes long, dry, and clean, leaving a chalky impression.
Stéphane Tissot and his wife Bénédicte have 35 hectares of vineyards “cultivated in bio-dynamic viticulture (certified by Demeter) to allow the soils to live, to have grapes untouched by chemical products, to allow natural yeast fermentations, to reduce the doses of sulfur in the cellar.”

André and Mireille Tissot founded their estate in 1962, in the village of Montigny-les-Arsures, in the Jura. Stéphane took over from his father with a new vision and converted it to chemical-free farming, organic and then biodynamic. They are meticulous in their farming and in the cellar, producing up to 28 unique cuvees.
