This single-vineyard red wine comes from a small parcel of forty-year-old Pinot Noir vines grown on Lias marl soils in Arbois. Stéphane and Bénédicte Tissot manage the site under certified biodynamic farming to ensure fruit density and health. Fermentation occurs spontaneously with indigenous wild yeasts in neutral wooden casks, minimizing physical manipulation. Aged for around two years in topped-up French oak barriques, it delivers a firm, site-specific structural architecture.
It pours a dark ruby color, opening with expressive aromatics of wild blackberry, dark plum, woodsmoke, and black tea. On the palate, the medium-to-full body shows a lovely tension, balancing a dense fruit presentation with a firm line of chalky tannins. Savory layers of clove, cedar, and crushed limestone integrate smoothly with the red fruit core. A vertical wave of alpine acidity runs through the mid-palate, keeping the mouthfeel lively. It finishes dry and persistent, leaving a savory impression.
Stéphane Tissot and his wife Bénédicte have 35 hectares of vineyards “cultivated in bio-dynamic viticulture (certified by Demeter) to allow the soils to live, to have grapes untouched by chemical products, to allow natural yeast fermentations, to reduce the doses of sulfur in the cellar.”

André and Mireille Tissot founded their estate in 1962, in the village of Montigny-les-Arsures, in the Jura. Stéphane took over from his father with a new vision and converted it to chemical-free farming, organic and then biodynamic. They are meticulous in their farming and in the cellar, producing up to 28 unique cuvees.
