Named in honor of Stéphane’s grandfather André, this red wine combines equal parts Poulsard, Trousseau, and Pinot Noir from biodynamic Jura plots. The winemaking utilizes an extended and gentle maceration process to manage the extraction, relying entirely on native wild yeasts for spontaneous fermentation. The wine settles naturally in neutral containers without added sulfites, prioritizing regional transparency over commercial adjustments. This traditional approach yields a light, low-intervention red that functions beautifully with a light chill.

It pours a translucent ruby color, opening with fragrant aromas of fresh raspberry, sour cherry, violet, and white pepper. A light-bodied, juicy frame balances bright red fruit flavors with a soft, unexpectedly broad tannin structure. Savory notes of damp earth and wild spices develop nicely across the mid-palate. A clean, central thread of alpine acidity runs through the center, keeping the fluid mouthfeel refreshed. It finishes dry and energetic, leaving a lingering mineral trace.

Stéphane Tissot and his wife Bénédicte have 35 hectares of vineyards “cultivated in bio-dynamic viticulture (certified by Demeter) to allow the soils to live, to have grapes untouched by chemical products, to allow natural yeast fermentations, to reduce the doses of sulfur in the cellar.”

They produce truly unique, terroir-driven natural wines, wines we love, admire, and cherish. These are without doubt some of our most prized wines. 

André and Mireille Tissot founded their estate in 1962, in the village of Montigny-les-Arsures, in the Jura. Stéphane took over from his father with a new vision and converted it to chemical-free farming, organic and then biodynamic. They are meticulous in their farming and in the cellar, producing up to 28 unique cuvees.
