This sparkling white wine is crafted by Stéphane and Bénédicte Tissot from one-hundred percent Pinot Noir grown in Arbois. The vineyards are managed under strict biodynamic practices, highlighting thin topsoils over rich limestone and marl. The winemaking involves a spontaneous primary fermentation using native wild yeasts in neutral wooden casks. It undergoes secondary fermentation and extended aging on the lees without any added sulfites, focusing entirely on structural transparency.
It pours a pale straw color with silver highlights and a persistent stream of bubbles. The nose opens with delicate aromas of crisp red apple, fresh raspberry, and warm brioche. On the palate, a linear mousse delivers tart red berry flavors alongside a distinct, chalky mineral texture. A sharp, vertical wave of natural acidity cuts right through the mid-palate volume, keeping it fresh. It finishes clean, dry, and mouthwateringly long, leaving a persistent stony impression.
Stéphane Tissot and his wife Bénédicte have 35 hectares of vineyards “cultivated in bio-dynamic viticulture (certified by Demeter) to allow the soils to live, to have grapes untouched by chemical products, to allow natural yeast fermentations, to reduce the doses of sulfur in the cellar.”

André and Mireille Tissot founded their estate in 1962, in the village of Montigny-les-Arsures, in the Jura. Stéphane took over from his father with a new vision and converted it to chemical-free farming, organic and then biodynamic. They are meticulous in their farming and in the cellar, producing up to 28 unique cuvees.
