Presented in a magnum format, this red wine is made entirely from Poulsard grapes grown in biodynamic vineyards in Arbois. Stéphane and Bénédicte Tissot practice low-intervention winemaking, allowing spontaneous fermentation driven by native wild yeasts. The fruit undergoes extended skin contact and ages entirely in clay amphorae for several months. This ancient method allows for a slow, structural extraction while completely avoiding wood components or added sulfites.
It pours a translucent, pale ruby color, opening with expressive aromas of wild raspberry, fresh strawberry, and damp earth. On the palate, the light-bodied frame is juicy and direct, focusing on an energetic red fruit presentation. Fine-grained, soft tannins integrate smoothly with a clean line of alpine acidity. Subtle nuances of wild spice and wet stone build a clean, layered profile that feels weightless. It finishes clean and dry, leaving a refreshing mineral trace.
Stéphane Tissot and his wife Bénédicte have 35 hectares of vineyards “cultivated in bio-dynamic viticulture (certified by Demeter) to allow the soils to live, to have grapes untouched by chemical products, to allow natural yeast fermentations, to reduce the doses of sulfur in the cellar.”

André and Mireille Tissot founded their estate in 1962, in the village of Montigny-les-Arsures, in the Jura. Stéphane took over from his father with a new vision and converted it to chemical-free farming, organic and then biodynamic. They are meticulous in their farming and in the cellar, producing up to 28 unique cuvees.
