Harvested from 50-year old vines, this Albarín is aged under flor for three-five years.  The name 'Rara Avis' of rare bird, describes this wine perfectly, as it does for the winemaker.  Raul's unusual treatment of this varietal plays tribute to his love for northern Spain, utilizing traditional sherry making techniques to elevate this naturally crisp and fruity varietal with oxidative, nutty notes and a dry finish.
