Sourced entirely from the organically farmed Seven Springs Vineyard in the Eola-Amity Hills, this sparkling white wine represents a traditional method bottling. The hand-picked chardonnay grapes are vinified using low-intervention protocols, featuring a completely spontaneous fermentation with native wild yeasts in neutral containers. It completes its secondary fermentation and matures on its lees inside deep cellars to encourage texturally driven complexity. It settles naturally for a few years in the bottle prior to a low-dosage disgorgement.

It pours a pale straw-yellow color with an ample, soft mousse, releasing clear aromatics of yellow apple, lemon flesh, and white cherry. A medium-bodied frame balances orchard fruit flavors with an underlying stony mineral core. A nutty, creamy quality comes through from the lees contact, providing an unctuous texture across the mid-palate volume. A sharp beam of natural acidity cuts through the center, keeping the fluid mouthfeel refreshed. It finishes dry, long, and open.

Evening Land Vineyards is an acclaimed estate located in the Eola-Amity Hills of Oregon's Willamette Valley, renowned for its exclusive stewardship of the historic Seven Springs Vineyard. Originally planted in 1984 by Oregon wine pioneer Al MacDonald, the site has become a cornerstone of the region, celebrated for its rocky volcanic soils and cooling Pacific breezes that travel through the Van Duzer Corridor. Since 2014, the project has been led by the highly influential partnership of sommelier Rajat Parr and winemaker Sashi Moorman, who transitioned the estate to focus entirely on fruit from this single vineyard. Their winemaking philosophy emphasizes minimal intervention, native yeast fermentations, and the use of neutral oak and concrete to preserve the purity and tension of the fruit. The vineyard is farmed according to organic and biodynamic principles, and the wines are categorized into specific tiers like the approachable Seven Springs, the expressive La Source, and the concentrated, high-elevation Summum. While primarily known for world-class Chardonnay and Pinot Noir, they also produce notable Gamay Noir, Chenin Blanc, and traditional method sparkling wines, all of which reflect a commitment to transparency and site-specific character.
