This natural sparkling wine is a traditional pét-nat blend crafted by Christian Knott and Morgane Seuillot in Burgundy. The cuvée co-ferments organically grown gamay and pinot noir grapes harvested by hand from high-elevation plots. The winemaking utilizes a single continuous fermentation that begins in neutral vats with native wild yeasts and finishes directly inside the bottle. Moving the juices entirely by gravity, the producers bottle the sparkler unfiltered and without any added sulfur.
It pours a hazy, pale pink hue with a lively mousse, opening with aromas of wild strawberry, raspberry, and subtle yeasty notes. On the palate, the light-bodied frame is dry and crisp, balancing a core of bright red fruits with citrus rind. The extended lees contact provides a clean, texturally detailed mouthfeel that carries through mid-palate volume. A fine vein of chalky minerality runs underneath, providing structural balance. It finishes clean and dry, leaving a saline impression.
