Sourced from the Cedarville Vineyard in the Sierra Foothills, this red wine represents a cool-climate style of California syrah. The grapes grow on decomposed granite soils at high elevation, which naturally locks in a vibrant natural acidity. The winemaking incorporates twenty percent whole clusters during fermentation and includes a small co-fermentation with a portion of white viognier grapes. It matures in neutral French oak barrels to allow the structural elements to settle naturally without wood dominance.
It pours a dark ruby color with purple edges, opening with aromas of fresh wild blackberry, plum, and blue flowers. On the palate, the medium-bodied frame is juicy and precise, balancing dark berry fruit with moderate, fine-grained tannins. Savory notes of cracked black pepper and fresh garden herbs integrate smoothly into the fruit core. A clean thread of natural acidity runs through the center, keeping the mouthfeel thoroughly refreshed. It finishes dry and clean.
Cold Spring is a boutique winery and project in El Dorado County, California, founded in 2019 by winemaker Adam Smith. A native of the region, Smith returned to the Sierra Foothills after gaining extensive experience in winemaking in California, Oregon, and abroad. The winery is named after a historic Gold Rush-era ghost town in El Dorado County, reflecting the region's long history. Smith is committed to organic and hands-off winemaking, with fermentations guided by wild yeasts to allow the unique character of El Dorado's terroir to shine. With vines planted in the high-elevation terrain of the Sierra Nevada foothills, the wines are known for being vibrant and expressive, balancing ripe fruit flavors with alpine freshness. Before establishing Cold Spring, Adam Smith held positions at acclaimed wineries such as Domaine Serene in Oregon and Banshee Wines in Sonoma, giving him a deep understanding of different winemaking styles.
