Crafted by winemaker Agustí Torelló Roca in the Penedès region of Spain, this dry white wine focuses on the indigenous xarel-lo grape. The fruit is grown using organic viticulture on local limestone soils that restrict vine vigor. The winemaking embraces low-intervention principles, utilizing spontaneous native yeast fermentation and minimal sulfur additions. Aging occurs in a combination of old oak barrels and clay amphorae to encourage textural breadth while keeping wood flavors out of the wine.

It displays a bright straw color, releasing aromatics of green apple, lemon oil, wild herbs, and white flowers. The palate is light-to-medium-bodied and refreshingly crisp, driven by a sharp wave of maritime acidity. Flavors of fresh citrus and white peach fold into a textured mid-palate that shows an element of mineral salinity. The gentle clay influence provides a smooth mouthfeel avoiding any heavy weight or butteriness.

Anima Mundi is the personal project of Agustí Torelló Roca, a winemaker in Catalonia's Penedès region. It was founded in 2015 as a complement to his family's established winery, AT Roca. In Anima Mundi, Roca experiments with natural, low-intervention winemaking techniques to express the unique terroir of the Alt Penedès. Roca's approach is guided by the philosophy of capturing the anima mundi, or "soul of the world," in each bottle. He achieves this by using spontaneous, wild-yeast fermentations and working without any additions, including sulfur. The finished wines are typically not fined or filtered
