J. Lassalle Cachet Or Premier Cru Brut NV
J. LassalleGrape: Pinot Meunier, Chardonnay, Pinot Noir
Vintage: NV
Type: Sparkling
Sourced from Premier Cru vineyards around Chigny-les-Roses in the Montagne de Reims, this classic estate-grown sparkler blends equal parts pinot meunier, chardonnay, and pinot noir. The three-generation, all-female-led domaine ferments each plot separately in stainless steel, then passes the wine through full malolactic fermentation to soften the structure. The blend ages on its fine lees in the cellar for 3 to 4 years before disgorgement, then finishes with a balanced dosage of 8 to 9 g/L of residual sugar. This is a round, harmonious Montagne de Reims Brut defined by its leesy depth and creamy balance.
It pours a pale straw-gold with a continuous, ultra-fine bead of bubbles. Aromas of fresh pear, Mirabelle plum, brioche, and white blossom give way to a rounded palate filled with golden apple, lemon curd, and toasted almond. The 8 to 9 g/L dosage softens the vibrant natural acidity, weaving seamlessly into the supple, velvety mid-palate texture. It finishes with a broad, clean impression of citrus zest and chalky limestone.
Winery
Champagne J. Lassalle is a premier grower-producer founded in 1942 by Jules Lassalle in the Premier Cru village of Chigny-les-Roses, in the heart of the Montagne de Reims. Following Jules’s passing in 1982, the estate became one of Champagne's pioneer female-led domaines, directed by his wife Olga and daughter Chantal, and today joined by his granddaughter Angéline Templier. The family farms 11.5 hectares across 45 separate parcels, predominantly classified as Premier Cru and Grand Cru in villages like Chigny-les-Roses, Ludes, and Rilly-la-Montagne. Plantings are heavily weighted toward pinot meunier (nearly 50%), supported by chardonnay and pinot noir, farmed sustainably with low yields to preserve plot-by-plot character.
In the cellar, winemaking strictly adheres to the traditional techniques established by Jules in the 1940s. Grapes are pressed plot-by-plot using the estate’s original wooden basket press to achieve gentle extraction without coloring the juice. Unlike many modern houses, all cuvées undergo full malolactic fermentation, providing a lush, creamy textural core that balances bright Montagne de Reims acidity. The estate is distinguished by its patient cellar aging, holding non-vintage bottlings—such as their flagship Brut Préférence—for a minimum of 5 years on the lees before disgorgement, while vintage releases like Cuvée Angéline and their Special Club rest for nearly a decade. The resulting Champagnes offer rich autolytic depth, fine mousse, and graceful mineral balance.
