This grower Champagne is crafted by Aurélien Lemaire from a small four-and-a-half hectare organically farmed estate. The blend combines traditional pinot noir, pinot meunier, and chardonnay alongside rare heirloom varieties pinot gris and arbane harvested from the base year. Vinification utilizes native wild yeasts for spontaneous fermentation, avoiding modern cellar adjustments or filtering to respect the fruit. Aged on its fine fermentation lees before secondary bottle fermentation, it is finished with a very low dosage.
It pours a pale straw color with silver reflections and a fine, energetic mousse. The nose opens with delicate aromas of green apple, lemon oil, fresh blossoms, and sea salt. On the palate, the vinous frame balances floral freshness with a tense, mineral-driven line of chalky acidity. Crunchy flavors of grapefruit pith and white cherry wrap around a textured mid-palate. It finishes completely dry and crisp, leaving a lingering, mouthwatering impression of maritime salinity.
Aurélien Lemaire is a young winemaker who joined the family estate Champagne Claude Lemaire in 2016. In 2018, he inherited 2ha of vines and started to produce his own Champagne, with 2019 being his first own vintage released, making a very promising debut. Located in Bousault in the heart of Vallée de la Marne, the estate is composed of 5 ha of 18 different parcels. Since arriving, he has worked to convert the estate to organic and modernize all the winemaking processes, while advocating for a lower level of intervention, to let the terroir express itself. In the cellar, the goal is to enhance freshness and complexity through precise, respectful work.
