Brothers Jean and Pierre Gonon harvest entirely by hand, fermenting whole clusters naturally with native yeasts in traditional open-top oak vats. Gentle punch-downs and pump-overs extract fine structure before the wine ages for 12 to 14 months in large, neutral oak demi-muids and foudres. A deep ruby color with violet reflections introduces lifted aromas of crushed blackberry, smoked meat, cracked black pepper, and fresh violet petals.
