Grown on the high-altitude, cold plateau of Amyntaio in Northwestern Greece, this precise sparkling wine is a masterclass in the versatility of the indigenous Xinomavro grape. Winemaker Laurens Hartman uses organic, hand-harvested fruit from old vines rooted in poor, sandy soils that force the vines to grow deep for moisture. The base wine undergoes a gentle whole-cluster press and native fermentation before being bottled for secondary fermentation, following the traditional method. Disgorged with a minimal dosage after a lengthy rest on its lees, this zero-compromise cuvée captures the chilly, continental wind of the region.

In the glass, it displays a pale straw-yellow hue with a persistent, hyper-fine bead of bubbles. The nose is highly complex and unique, leading with aromas of green apple, sourdough crust, white peach, and a distinct, savory touch of sun-ripened tomato water. On the palate, a "crystalline" laser beam of high-toned acidity drives through the mousse, giving the wine incredible structural tension. The extended time on the lees provides a subtle, biscuity weight that perfectly counterbalances the bone-dry, razor-sharp entry. It finishes with impressive architectural length, leaving a mouthwatering trail of lemon oil, sea salt, and wet slate.

 

Domaine Karanika is Laurens Hartman-Karanika and Annette van Kampen's organic and biodynamic estate in Amyndeon, the cool, high-altitude plateau of northwestern Greece. Drawn to the region's naturally high acidity and old Xinomavro vines, they built the domaine around traditional-method sparkling wine while also producing still wines from Xinomavro, Assyrtiko and other varieties. The winery is largely subterranean and designed to work with the local climate, with solar energy and composting integrated into the farm. Karanika's wines are precise, dry and vibrant, establishing Xinomavro as a compelling source of serious Greek sparkling wine.
