This dry white wine is a pure varietal expression of Pecorino produced by Stefano Papetti and Nicoletta De Fermo in Abruzzo. Sourced from estate plots managed under strict certified biodynamic viticulture guidelines, the fruit grows on clay-limestone hillsides. The hand-picked grapes are pressed gently and ferment spontaneously with native wild vineyard yeasts inside large volatile oak casks. The wine undergoes a natural maturation process on its fine lees without modern adjustments, filtering, or heavy extraction.
It displays a bright straw-yellow color, releasing clean aromatics of fresh yellow grapefruit, apricot, and dried chamomile flowers. A medium-bodied, robust frame pairs ripe orchard fruit flavors with an underlying chiseled mineral undercurrent. A zesty, electric acidity slices directly through the waxy texture, providing excellent structural tension and freshness. Subtle notes of wild herbs and an Adriatic salinity add depth across the clean mouthfeel. It finishes completely dry, leaving a long, savory trace.
De Fermo is a biodynamic and low-intervention winery in Loreto Aprutino, within Italy's Abruzzo region. Run by the husband-and-wife team of Stefano Papetti Ceroni and Eloisa de Fermo, the estate focuses on expressing the pure terroir of its vineyards. The estate's history of viticulture dates back to the 9th century. When the current owners took over in 2009, they restored a long-abandoned 18th-century cellar. The estate's vineyards have been certified biodynamic since 2010, and this holistic farming method is applied across the entire farm, which also grows olives, legumes, and cereals. The winemakers embrace a "hands-off" philosophy. Fermentations occur spontaneously with native yeasts, temperatures are not controlled, and wines are bottled without fining or filtration.
