This skin-contact white wine is a non-traditional blend of Viognier, Vermentino, and Moscato crafted by Joy Kull in Lazio. Sourced from a rescued twenty-year-old vineyard in Farnese, vines thrive in iron-rich volcanic ash near Lake Bolsena. Kull employs a true zero-zero natural winemaking approach, allowing partial skin maceration and a spontaneous native fermentation. The liquid matures inside fiberglass tanks and is bottled entirely unfiltered and without added sulfur.
It pours a slightly hazy golden-straw hue, releasing intensely perfumed aromas of ripe apricot, orange blossom, and wild mint. On the palate, a medium-bodied frame balances stone fruit flavors with a crystalline streak of electric, volcanic acidity. The brief skin contact provides a fine tannic grip that gives the mid-palate great structural focus and agility. Subtle notes of citrus peel add depth across the textured mouthfeel. It finishes bone-dry, leaving a savory trail of mineral brine.
