The Domaine Economou Assyrtiko 2016 is a masterful and unique expression of the Assyrtiko grape from Crete. The tasting note reveals a wine with a deep golden hue and an intense, evolving bouquet of dried yellow fruits, beeswax, and a distinct mineral and saline character. On the palate, it is rich and full-bodied, with a waxy texture and soaring acidity that provides a powerful counterpoint to its notes of honeyed fruit, toasted nuts, and savory herbs. The finish is long and persistent, showcasing a complex interplay of fruit, saltiness, and a subtle oxidative edge.This wine's vinification reflects a low-intervention, traditional approach. Grapes from old, own-rooted Assyrtiko vines are hand-harvested from the high-altitude Ziros plateau.
