Tissot's Arbois Chardonnay "Les Graviers" is a brilliant expression of Jura Chardonnay and probably the most Burgundian of the single vineyard sites. On the palate, it is known for its remarkable tension and minerality, with a core of citrus and white stone fruit, and often a distinctive "noble reduction" note of flint and matchstick. It is a wine that balances a lean, chiseled structure with a sense of depth and concentration, culminating in a long, saline finish. The vinification is a testament to the domaine's meticulous and hands-off approach. Grapes are hand-harvested from biodynamically farmed vineyards with limestone-rich gravel soils. The wine undergoes spontaneous fermentation with indigenous yeasts and is aged in French oak barriques, with a small percentage of new wood, for an extended period. The wine is bottled unfined and unfiltered, preserving its purity and authentic expression of a unique terroir.

Stéphane Tissot and his wife Bénédicte have 35 hectares of vineyards “cultivated in bio-dynamic viticulture (certified by Demeter) to allow the soils to live, to have grapes untouched by chemical products, to allow natural yeast fermentations, to reduce the doses of sulfur in the cellar.”

André and Mireille Tissot founded their estate in 1962, in the village of Montigny-les-Arsures, in the Jura. Stéphane took over from his father with a new vision and converted it to chemical-free farming, organic and then biodynamic. They are meticulous in their farming and in the cellar, producing up to 28 unique cuvees.
