Tissot's 2022 Pinot Noir "Sous la Tour" from the Jura is a compelling expression of the grape from a non-Burgundian terroir. The grapes hail from a limestone slope known as "les Corvées Sous la Tour", farmed biodynamically, and harvested by hand. They undergo a 3 week whole-cluster maceration and then mature for a year in Burgundy barrels. Bottled without sulfur or filtration. The wine presents a translucent ruby color. On the nose, it offers a fragrant bouquet of red fruits—notably redcurrant and pomegranate—layered with subtle notes of forest floor, gentle spices, and a distinctive limestone minerality. The palate is elegant and balanced, showcasing a core of ripe red fruit framed by fine, silky tannins and a refreshing acidity that carries through a long, juicy finish. This wine is approachable in its youth but possesses the structure and finesse to evolve with cellar aging.

Stéphane Tissot and his wife Bénédicte have 35 hectares of vineyards “cultivated in bio-dynamic viticulture (certified by Demeter) to allow the soils to live, to have grapes untouched by chemical products, to allow natural yeast fermentations, to reduce the doses of sulfur in the cellar.”

André and Mireille Tissot founded their estate in 1962, in the village of Montigny-les-Arsures, in the Jura. Stéphane took over from his father with a new vision and converted it to chemical-free farming, organic and then biodynamic. They are meticulous in their farming and in the cellar, producing up to 28 unique cuvees.
