The palate is extremely refreshing and linear, showing crisp acidity, a gentle spritz, and a savory, mineral-laced finish that is structured by the *col fondo* texture. The vinification follows the ancestral method: grapes (predominantly Glera with a small amount of local varieties) are spontaneously fermented in concrete tanks; the secondary fermentation occurs naturally in the bottle using a reserve of the wine’s own fresh must, with no disgorgement or dosage, allowing the wine to mature on its noble yeasts.
