In the cellar, the fruit undergoes an intense, wild-yeast fermentation and a staggering two-month maceration on the skins in large oak vats with no temperature control. The wine is then aged for a patient five to six years in neutral oak \u003ci data-path-to-node=\"4\" data-index-in-node=\"733\"\u003ebotti\u003c\/i\u003e, followed by several additional years of resting in the bottle before release.
