Still red wine is rare in Champagne, where almost every grape goes into sparkling wine. It is vinified and aged in French oak barrels for around 18 months. Like everything Chavost makes, it is produced without added sulfites; the label simply reads \"wine drawn from the grape, and that's all.\"\u003c\/p\u003e\n\u003cp\u003eIt pours a translucent ruby, opening with sour cherry, red currant, and cracked pepper. On the palate, the medium-bodied frame balances bright red fruit with fine, gentle tannins. Earth, dried leaves, and a chalky note sit underneath. Cool-climate acidity keeps it taut and lifted.
