The grapes ferment on their skins with native yeasts in stainless steel for about 3 weeks. Most of the wine is then raised in 500-liter oak barrels, with a small share in amphora. It is bottled unfined, unfiltered, and with no added sulfur, at a gentle 11.5% alcohol.\u003c\/p\u003e\n\u003cp\u003eIt pours a hazy golden amber, opening with tangerine, lemon candy, and a flinty, struck-match note. On the palate, the light-to-medium-bodied frame balances ripe citrus with a fine, grippy texture from the skins. Dried herbs and a salty, chalky note sit underneath. The high natural acidity of xarel·lo keeps it lifted and fresh.
