From a 25 year old vineyard on schist sub soil and loamy-sandy top soil. Organic farming, Biodynamic preparations, worked with a horse. After a direct press, the Chenin juices fermented spontaneously with indigenous yeasts, and without adding So2. The juice was then aged in 2 new kinds of vessels: a ceramic barrel and a sandstone amphora, allowing a controlled slight oxidation.
